I hated being forced to eat this as a kid.
- 1 3/4 cups chicken broth
- 2 packages (10 ounces each) or 1 bunch broccoli
- 1/4 cup butter
- 1/4 cup flour
- 1/4 teaspoon salt
- Dash of pepper
- 1 cup milk
- 1 cup plain yogurt
- 1 egg
Yield: 6 cups
This goes well served with biscuits
- Cook broccoli in chicken broth until tender.
- Meanwhile, melt butter in pan and stir in flour, salt, and pepper; cook about 1 minute. Gradually add milk; stir until smooth; remove from heat.
- Whirl broccoli and broth in blender until smooth. Add to milk mixture and reheat. Mix egg into yogurt and stir into soup. (The egg helps keep the yogurt from curdling.) Heat until hot but not boiling.
