For those times when Chipotle and your local Mexican restaurant are too far away, I humbly offer this inadequate substitute.
I normally have pasta, cream cheese, and chicken on hand, and it's easy to keep frozen broccoli around to make this easy meal.
This is partly based on a recipe from my Aunt Kathy (for truly authentic Australian enchiladas) and partly from the Budget Bytes recipe.
