This is a long-time family favorite. I don't even know where it came from originally. It's always a go-to when the vegetarian cousins come to visit.

If you don't put frosting on it, it's considered a muffin and not a cupcake. Which makes it an acceptable breakfast food.
This was the only way my parents ever got me to eat spinach as a kid. I think it's still the only way I eat spinach: surrounded by sausage and smothered in cheese.
