Even in cookies, the secret is cheese -- in this case, cream cheese. It keeps the cookies moist and prevents blandness. Also butter. Always butter.
- 4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup butter
- 2 eggs
- 6 ounces cream cheese
- 2 cups sugar
- 1 teaspoon vanilla
Cook Time: 8 minutes
- In a medium bowl, mix the flour, baking powder, and salt.
- In a large bowl, beat butter and cream cheese for 30 seconds. Add sugar and vanilla; mix well. Incrementally add the dry ingredients and mix.
- Cover dough and let chill at least 1 hour (overnight is best).
- Roll out dough about 1/8" thick. Cut out cookies and put on a cookie sheet. Bake at 375°F for 8-10 minutes, until edges are lightly browned.
